Level 7 Rooftop: Libations & Tasty Tempations

North Hills in Midtown Raleigh is one of my favorite areas of the city. There is so much to do and see.  You can grab a bite, shop at many of the boutiques, catch a movie at the theater. One of the options that was missing from North Hills was a really good rooftop for views and drinks with friends. Level 7 rooftop fulfills this need and more. We have been a few times and always enjoy ourselves, especially if we are able to catch the sunset. Level 7 is located in the sleek AC Hotel by Marriott. The hotel is fabulous and perfect for if you are visiting Raleigh and want a central location. The AC is hip without being overly sterile as some newer hotels can be and that is most likely due to the European inspired design that was used in building this lovely hotel. 





When you take the elevator and get out on the 7th floor you are met by an open space with lots of windows, numerous seating options and a fun, colorful bar area. If you are able to arrive and catch sunset, you will not be disappointed! The outdoor seating is spacious and the perfect gathering spot with friends before a night out. They also have heaters on the patio so you can enjoy the view for more than one season.   One of my favorite aspects of Level 7 is that they create quality cocktails in a fabulous ambiance. They truly have put thought into each of their cocktails and the tapas menu has a variety of options for just about everyone's palate.


I am a bourbon girl and that is what my taste buds gravitate towards.  My bartender asked me a few questions and led me to order the Level 7 Old Fashioned. This is typically one of my go to cocktails but I was slightly skeptical as it is made with Rye and I am not usually the biggest fan of Rye. Wellll, this drink changed that. I also loved the final touch of the cinnamon stick as it added a slight hint of favor that enhanced my drink. My husband is more of a gin fan and would normally go for simple and order a gin rickey or gin soda but went with the midnight martini. 

We were somewhat hungry and wanted to check out the tapas menu and ended up ordering a variety of plates. My husband really enjoyed the charcuterie board. He loved the quality of the cheeses and meats.  He added the olives and more than once commented how he appreciated that the olives were pitted, this always garners points from us when a restaurant serves them this way.  We also ordered the crisp potato wedges (these aren't your mamas potato wedges;) and the roasted wings.  The potatoes were perfectly cooked and had just a subtle flavor of olive oil, truffle and salt. So decadent.  The major hit for me however was the wings. They were so good I could have ordered more but decided to try and pretend to be classy while indulging at this trendy spot;) 







Level 7 is also a fabulous location to host your next gathering. They have plenty of space for a small get together or a larger event. They can stage the lounge to meet whatever your need is. They are more than willing to walk you around the space and work with you to get the most out of their location so that it works best for whatever event you may be planning. Just be sure to invite me as well. That seems fair.

Kiss My Boots

 A few weeks ago I took the quick trip from Raleigh to the small and charming town of Wendell to check out a distillery, Oaklee Distilling and their new release; Boots Vodka Troop Strength. Their space is small but the product and equipment used in the process is of highest quality. Obviously, if you follow my blog at all then you know my love language is bourbon. I enjoy a quality vodka in a cocktail but I have rarely sipped a vodka and found myself enjoying the flavor profile. Boots changed all that and I believe it is due to many reasons but the two main ones would be this is a much higher proof vodka at 90 proof and the fact that they use a "hybrid" of sweet potatoes and corn.  Lee was so pleasant and helpful and you can tell how much love and passion is behind this spirit. In 2018 Oaklee plans to release a gin and bourbon as well. I cannot wait to try them out as I know they will be outstanding. You know I'll be the first in line when the bourbon is released!

I chose to name this fun cocktail "Kiss My Boots"

This is a simple cocktail with a twist on typical holiday variations but one that goes down easy (maybe a little too easy so watch how much you pour in grandma's cup;) I used cranberry pomegranate but if you cannot find them together. just buy them separate and use about 1 1/2 oz of each. You should be able to find pear nectar in most grocery stores. I added a little more flavor by making my ice cubes of the cranberry pomegranate juice so not to water the cocktail down as it melts.


Kiss My Boots

*Makes 2 servings

3 oz Cran/Pom juice
2 oz Pear nectar
3 oz Boots Vodka
1 oz Triple Sec
1 oz Ginger Beer

In a shaker with ice, combine the first four ingredients and shake vigorously. Fill two glasses with ice and pour the cocktails in the glass. Top each one with ginger beer and serve. You can also use Sprite if you are not a fan of the spice of ginger beer.

I *may* have enjoyed this tasty libation this while watching a Hallmark movie and wrapping presents.

Pumpkin & Prosciutto Gluten Free Pasta

When I first heard about TresOmega Gluten Free pasta options I will admit I didn't have the highest of hopes. GF pastas haven't been friendly to me in the past and the taste and texture of TresOmega was a pleasant surprise! It was as delicious as eating grain pasta and it is not only gluten free, it is organic as well. Score! While no one in my household is gluten free we have many friends who are due to varying reasons and I have purchased many products before trying to find a pasta that tastes similar to wheat pastas. Most have failed or been outrageously expensive. I am happy to know about TresOmega Organic & Gluten Free Pastas for the next time I cook for my friends who are Gluten Free.  Since it is organic as well, I will make it for us as well. Who doesn't want to be healthy when they can and not lose out on taste. It is a win-win!



This dish is the perfect comfort food and it is rather simple to whip up. When I think of pumpkin, my mind leans towards savory as I am just not a fan of pumpkin spice. Pumpkin itself tends to just add a subtle flavor to your dish and it a paired perfectly with the salty prosciutto. The pinch of red pepper flakes added just another layer of flavor.  Make this for a group or half it and enjoy a quiet meal at home!



This recipe is for using the whole box of pasta. If you like a thinner sauce, add a little more half and half and if you prefer a thicker sauce, feel free to add a little more cheese! Just remember if you are making this recipe for friends who are gluten-free that you make sure all other products are also gluten-free. Certain cheeses often times are not so I made sure to look for brands that are safe!


Pumpkin Prosciutto Pasta

1 box TresOmega Pasta
1 cup Half & Half
1/2 cup pumpkin
1/4 cup white cheddar
1/4 cup shredded parmesan
salt
pepper
garlic salt
red pepper flakes 
dijon mustard (optional)
sriracha (optional)
4 oz thinly sliced prosciutto 


In a saucepan, start your water to a rolling boil. With Gluten Free pastas it is imperative you follow directions for cooking time and amount of water to use. It definitely makes a difference in how they taste! Once it is boiling, add your pasta. 

In a separate saucepan add in the half and half and whisk in the pumpkin. Make sure they are totally combined and add in the cheddar and parmesan making sure to continuously whisk. Add your salt, pepper, and red pepper flakes. This is to taste so choose the amount you would like. You can also add a dash of dijon mustard and sriracha if you like a sharper taste with a little more spice.  Make sure to whisk thoroughly so not to let the cheese become stringy. 

Chop the prosciutto and saute til crispy. set aside. 

Once the pasta is ready; drain and place back in the pan. Pour the pumpkin cheese sauce over the pasta and toss together making sure to coat all the pasta pieces with sauce. Place the pasta in a serving dish and top with the crispy prosciutto and sprinkle on more shredded parmesan.

I cannot believe October is almost over and next week is Halloween! October is my favorite month and so I am a little sad about it ending but then we will be right into the swing of the holidays! I have the perfect libation to get you in the mood to jingle some bells. Or cut some turkey. Or you know, to help you deal with your relatives you want to hide from;)


I had been looking for a drink that would do well at both Thanksgiving and Christmas and one that is not too high in sugar as I am trying to watch my waistline and it is rather difficult this time of year. I found the answer though and there is no lacking in taste what you give up in calories when you use Steviva products.  This concoction is absolutely delicious. You could also make this as a cocktail and forgo the alcohol.

The base of this drink is just that: a base. Once you create the base, you can make a multitude of flavors and drinks and it is definitely more simple than it looks!


Yule Thank Me Later

Base
1 to 1 1/2 cup fresh cranberries
1 large orange (or 2 small)
1 1/2 tbsp Fructevia
1/2 tbsp Nectevia

drink
1 1/2 oz bourbon (chilled)
2 oz ginger beer (chilled)

In a small saucepan, add the cranberries, juice from the orange (make sure to squeeze out as much as you can) Fructevia, Nectevia, and 2 or 3 pieces of orange peel. Let simmer for about 10 minutes.  Once it has broken down to the texture of a compote, let cool. After about a half hour, push the cranberry/orange compote mixture through a mesh sieve. With the puree you have left, using a spoon, place 2-3 tablespoons in a glass.  Top with bourbon. Stir. Finish off with ginger beer and enjoy!


This whole drink takes about half an hour from start to finish but with only about 5 minutes of hands-on work. It really is simple but tastes like the holidays. I have made a lot of libations and I think this may be my favorite so far. The tartness of the cranberry is muted by the sweetness of the Fructevia and Nectevia additions and they pair so well together with the bourbon and the final bite of ginger beer! You can always do this to taste and use less or more of the Steviva products or ginger beer. The best part of making your own cocktails at home is that you control the taste! Forgo the bourbon for a family-friendly treat.

Happy Fall Y'all

Hello everyone. I am pumped to take part in this week's Fall Home Tour with some lovely bloggers. There are new posts every day this week! Be sure to check them all out! 



It never fails, each year I wholeheartedly declare my love of all things Fall, how I can't get enough football, sweaters, boots, and scented candles from Bath & Body Works. And while I do love pumpkins, you can keep the pumpkin spice;) 
This year my adoration for Fall has reached new heights because we finally own a home versus a townhome and I may have gone a little overboard in the decorations. My house is still slightly under construction so I am showing more o highlights of my home and Autumn decor versus total rooms. Not having curtains or blinds when you were supposed to will do that to you.  

Welcome to our abode and I hope you enjoy your visit! 

I will say that one of my favorite parts of the house is our steps leading to our homey front porch. These steps are perfect for mums and we love to sit on our porch and chat with new neighbors who are walking by! It is also the perfect spot for wine. 



Meet Wilbur, our guard pig. He is my buddy. Always happy to see me. Haha


These white pumpkins and gourds with green and orange stripes are my new obsession. I love how atypical they are and add a little more flair to my front porch!

The living room is one of my favorite spots in the house. It is so bright and airy. I kept this room mainly neutrals with a few pops of color.  This space is so comfy and I find myself drawn here with a book and the fireplace going...even in September. I am sure my husband is thrilled. I found this sweet propeller clock for 65% off at Kirklands and it was the final touch I needed for the room. One of my favorite pieces is the rug. It could be an Autumn themed rug for all intents and purposes with its muted greens, oranges, and grays. It pulls everything together and it was a total steal on Wayfair and even better...it is so soft and perfect to run your toes through!

The absolute adoration I have for these pumpkins may be a bit unhealthy. Ha, absolutely one of my newest Fall obsessions around the house. I just love them and the sweet addition they are to my home.

Next up is my tablescapes for my kitchen and dining space. Prior to this home, we had a really small kitchen table in our townhome. Due to the smaller space, it was difficult to decorate to the extent I wanted and therefore my kitchen tables were decorated for about a week before I had to put the decorations away to make room to you know, actually eat. Now space is in abundance and we have a kitchen and dining table and so was able to buy two small centerpieces and I love them. They match each room and my personality well.

Whiskey Woman

Most of you who follow my blog know about my love affair with all things bourbon. I am a country girl through and through. Bourbon soothes me and I prefer it neat; no ice or cola for this gal. I will enjoy it in a cocktail from time to time if it is done right. I have found a few bars in Raleigh that fuel my bourbon desire. 

First up is Whiskey Kitchen. I waited for months for this place to open, not only to dabble in their bourbon selection but because their patio is one of the best in all of Raleigh. It just screams for you to have a good time. 



Whiskey Kitchen has an amazing selection of bourbons and other whiskeys from all over the world. You can also eat dinner here but I will be honest and say I have yet to order anything other than cocktails and pie. I can say with certainty that you should try their shoo fly pie. Oh, it will do you good. I promise. 


If you haven't yet been over to Whiskey Kitchen, grab a bunch of your girlfriends ( or any friends for that matter) and head over to Nash Square and grab a table on their fabulous patio. The summer is winding down which means it is perfect outdoor weather here in Raleigh for the next month or two. 


I also suggest Dram & Draught off of Hillsboro St. They constantly change their cocktail menu up to suit the season so you will always be able to venture out of your usual libation and try something new. Kevin is probably one of the best bartenders in all of Raleigh and he will steer you in the right direction that is suited to your taste. They do not offer food but there is usually a food truck on site. 


Last but not least for a fabulous whiskey selection is the often over looked Blind Barbour. This is actually one of my go to bars for tried and true bourbon cocktails. It is a smaller, more intimate bar tucked away from downtown but they offer great service and one of the best Old Fashioneds around! This place gives off more of an old school vibe and I love it. 

Chocolate Covered Bourbon Cherries #SummerDessertWeek

I am always about making simple, yet tasty bites for when we have a crowd over and this recipe is no different.  I had these the first time probably 10 or so years ago at a party for a football game and was hooked immediately. The big difference is the few I have had before use the "jar cherries" and for this particular version I used fresh sweet cherries (Rainier) with no added sugar and they were even better than I anticipated! Yes, you do have do do a little more "work" with fresh cherries by pitting them but it took me less than 5 minutes to pit over a dozen of them ( thanks in large part to my amazing OXO cherry pitter!) These chocolate covered bourbon soaked cherries will become a staple at parties!


I was a little worried how this would go in the beginning because normally when I make them I just use the jar cherries and pour out half the juice and replace with bourbon and let sit for a few days. I wasn't sure without cherry juice to dilute the bourbon a little how they would taste but the cherries were just so juicy anyways, they used their own juices to meld with the bourbon and you get a nice mixture of both cherry flavor and bourbon with each explosive bite.

Ingredients

1 lb Rainier Fruit Cherries ( pitted)
1/2 cup bourbon
10 oz dark chocolate

Pit your cherries and then put in a container and pour in the bourbon. Make sure to seal with a lid overnight. The next day, drain the cherries ( save your cherry bourbon, because why would you waste it?!) pat the cherries dry. Melt the chocolate and using a toothpick or small fork, dip the cherries in the chocolate and cover completely. Place on a nonstick pan for the chocolate to set up and harden.

Enjoy. These also make great gifts. You can place them in a small mason jar or similar container and top with a bow and the perfect gift!

Caramel Heath Ricotta Cheesecake Bars #SummerDessertWeek

I love cheesecake and when I want to make a simple version for a large group of people, I have found that no bake cheesecake bars are the best option. These are a combination of both. Baked crust and no bake for the filling.  Still super simple and easy to whip up. 

 I have tried out a multitude of versions over the years and I think this may be my favorite so far. I love the combo of caramel and Heath in basically any recipe and this one ended up being no exception. For this particular recipe, I decided to mix ricotta and cream cheese for a sweeter and richer texture. My husband loves ricotta and while I dig it in savory dishes, I am not the biggest fan of it in sweet dishes (ie: cannolis) but this creation may have finally changed my mind. The added creaminess of the cream cheese lessened the grainy texture that I don't particularly usually care for in ricotta based desserts.  I think this Caramel Heath Cheesecake Bar recipe may end up being a regular contender on my dessert menu. 



For the crust on these bars, I did a somewhat 'cheat" I bought chocolate chip cookie dough and used that vs making my own dough but it was just as good. I have made a few different versions changing the crust each time. I have used sugar cookie dough and oatmeal butterscotch. All of them have been scrumptious so far. Feel free to make whatever version you prefer. 

Caramel Heath Ricotta Cheesecake Bars

10-12 oz chocolate chip cookie dough
8 oz cream cheese, softened
8 oz ricotta
1/2 cup Dixie Crystals Sugar
1 tsp Adams Best Vanilla Extract
1 tsp lemon juice
1/3 cup heavy whipping cream 

Place foil in bottom of 9x9 pan. Fill the pan with the cookie dough, use your fingers to spread the dough out and use your palms to flatten it down, making sure the bottom of pan is covered. Bake on 350 for about 20-22 minutes edges begin to brown. Center may appear undercooked. Chill the in fridge for about 30 minutes. 

In a bowl, combine the cream cheese, ricotta, sugar, lemon juice, and vanilla extract. Start your mixer on low and once all combined increase speed and mix for about 2 minutes to make sure mixture is smooth. I usually do a spoon taste at this point to make sure I am happy with the sugar amount and don't need to add any more. Once you are satisfied with taste, add in the whipping cream and beat on high for another 2-4 minutes until it has more of a mousse/thick cheesecake mixture. 

Pour over chilled chocolate chip cookie dough crust and place in fridge for at least two hours. 

Before serving, sprinkle the top with crushed heath bar pieces and drizzle the top with a caramel sauce. I have used a few versions and I have noticed that the more expensive ice cream sauces hold up better and do not water the cheesecake down after it settles. You can get a good quality jar for about $3.49. Or you can always make your own!

Cut into bars and enjoy. I will also say that these *may be* even better at midnight two days later after you have frozen them. But only maybe;) 

 I used a 9x9 pan and ended up using about 10 oz of cookie dough. I like the dough to be a little crispy and thin so once the cheesecake mixture settles, it becomes very chewy but still with a good texture and bite!
