Chocolate Covered Bourbon Cherries #SummerDessertWeek

I am always about making simple, yet tasty bites for when we have a crowd over and this recipe is no different.  I had these the first time probably 10 or so years ago at a party for a football game and was hooked immediately. The big difference is the few I have had before use the "jar cherries" and for this particular version I used fresh sweet cherries (Rainier) with no added sugar and they were even better than I anticipated! Yes, you do have do do a little more "work" with fresh cherries by pitting them but it took me less than 5 minutes to pit over a dozen of them ( thanks in large part to my amazing OXO cherry pitter!) These chocolate covered bourbon soaked cherries will become a staple at parties!


I was a little worried how this would go in the beginning because normally when I make them I just use the jar cherries and pour out half the juice and replace with bourbon and let sit for a few days. I wasn't sure without cherry juice to dilute the bourbon a little how they would taste but the cherries were just so juicy anyways, they used their own juices to meld with the bourbon and you get a nice mixture of both cherry flavor and bourbon with each explosive bite.

Ingredients

1 lb Rainier Fruit Cherries ( pitted)
1/2 cup bourbon
10 oz dark chocolate

Pit your cherries and then put in a container and pour in the bourbon. Make sure to seal with a lid overnight. The next day, drain the cherries ( save your cherry bourbon, because why would you waste it?!) pat the cherries dry. Melt the chocolate and using a toothpick or small fork, dip the cherries in the chocolate and cover completely. Place on a nonstick pan for the chocolate to set up and harden.

Enjoy. These also make great gifts. You can place them in a small mason jar or similar container and top with a bow and the perfect gift!

Bacon Wrapped Pretzels

I first made this recipe four years ago for a party.   To date, it is hands down, the most requested recipe in my repertoire. My sister in law even likes to hide them as they come out of the oven.  The combination of crunchy salty pretzels and the sweet and spicy flavor from the bacon can almost undo any sense of manners or decorum.


Everyone who knows me knows I will wrap anything possible in bacon. Here are some previous  recipes in case you forgot or haven't seen them yet:

 crack on a stick, this is my normal go-to recipe for parties. My friends beg me to make these or my asparagus version, This weekend I had the party in Virginia and I know they're my sissy in laws favorite so I decided to whip a couple batches up. Only one problem, I went to three different stores and couldn't find the breadsticks. 



Instead of throwing a fit panicking, I saw a package of pretzels that were roughly the same size and I decided to just wing it. Happy accident. They were so delicious, at least the 1 I got to try. I swear people must inhale these, this can be the only logical conclusion for when I took the 2nd batch out of the oven and went to look for a plate, turned around and the cookie sheet was empty! I'm not bitter really glad everyone seemed to love them too.

At first these always bring about the same response "bacon...on a pretzel" and it always is accompanied by a look that insinuates they are under the impression that I have lost my ever-loving mind(does anyone else use this saying? tell me I'm not alone in this) then they take that first bite and are overwhelmed with love for me. That's right. Love, adoration, every other good thought you can think of. 


Pretty simple,  I will stop rambling now so you can discover how to make these for yourself.

Ingredients
1 bag pretzel sticks
1 package bacon(I prefer maple and it has to be thinly cut)
 2 oz bbq sauce
 1 oz spicy brown mustard
 1 oz bourbon
 2 tbsp brown sugar
 1/2 tbsp chili powder
apricot jam(optional)

 Preheat oven to 350', cut the bacon in half, wrap each piece with bacon and lay on pan(foil lines are much easier to clean and you need a cookie sheet that has a lip so the grease doesn't drip while baking) In a small, microwave-safe bowl, take bbq sauce, mustard and 1/2 tbsp apricot jam, whisk together and add the bourbon. Heat for 10-15 seconds. Brush the tops of the pretzels w/the sauce. Sprinkle with brown sugar/chili powder.  mixture. Place in oven and bake for 15-18 min(when it starts browning you know it's ready) using a fork flip them over, brush with sauce & sprinkle w/brown sugar/chili and bake another 10-15 min. 

Once you get the hang of it, you can do this really quickly. And you can really make the sauce to your taste, if you don't want to use bourbon, use whatever your preference is, just needs something to thin the sauce out a bit. But I love bourbon. Like, almost as much as bacon. Could basically be a toss-up.  You can definitely make these ahead of time and place in the fridge.  Just abstain from brushing the sauce on till right before you bake them. That part takes all of two minutes.

 I just made your day. You just don't know it yet, it's cool though cause I am here to fill you in. Now go forth and make these puppies. like yesterday.

Bourbon Frosted Lemondade

One of my favorite summer treats is the Frosted Lemonade from Chic Fil A. It is so light and refreshing and truthfully, it is really simple to replicate at home! The coffee one is really good as well but I mean let's call that what it is...an affogato;) 



I made this a ton last summer. The creaminess of the gelato ( you can also use ice cream or yogurt) with the tartness of the lemonade have me craving it in the heat of North Carolina.  I would make a big batch and keep it in the freezer which is how I ended up making the raspberry frosted pops last year and have continued on this year as well. I mixed it up a bit and played around with my bourbon and with limoncello. and oh. my. word. Divine I say, d.i.v.i.n.e.

If you are able to make your own limoncello, I recommend that because the homemade versions tend to be a little sweeter and I love that about them. However, the ones you can find at your local liquor store will do in a pinch. 

I have started making ice cubes with my lemonade because I prefer that flavor over regular ice cubes, it lends more flavor to this concoction. 

I will give you both versions today, both are similar, one just uses lemonade and the other is a mix of lemonade and limoncello. 





Ingredients
1 cup vanilla gelato
1/2 cup lemonade ice cubes
1/2 cup lemonade
1/2 cup bourbon

blend in a blender, makes two to three servings. 

For the limoncello version
1 cup gelato
1/2 cup lemonade ice cubes
1/4 cup lemonade
1/3 cup limoncello
1/4 cup bourbon

blend and you have no choice but to enjoy. You can also add fresh strawberries, raspberries, or blackberries to this tantalizing summer treat!

Sweet N Spicy Bacon Wrapped Sweet Potatoes

I do love a recipe challenge, almost as much as I love bacon. Ergo, today's recipe is one of my favorites. I am participating in a bi monthly recipe challenge and this months ingredient is potatoes. I love me some potatoes and I will have 40 some recipes to look through and make these next few weeks. 



When I was deciding what to create,  I went round and round with a few ideas and then remembered I had this recipe post in my drafts from a long time ago. I looked it over and ,after gasping in horror, once I spied my photos, I decided this was definitely the recipe I wanted to go with and it was also the perfect time to practice my food photography on one of my first recipes. Slowly, I am getting better at capturing good shots. 



I am still learning as I go with my cameras and interestingly enough, I preferred the ones I took with my phone (galaxy 6) and so I went with those for this post. I hope they do justice to this simple appetizer because I promise, it is simple, yet delicious! This is also a recipe that you can play around with the spices to perfect it to your taste. 

Ingredients
2 medium/large sweet potatoes
1 package bacon
1 1/2 tbsp bourbon
1 1/2 tbsp brown sugar
1 tbsp chili powder

preheat oven to 350 degrees. Line a baking sheet with foil. Cut the potatoes somewhat thin, in rounds. Cut each slice of bacon in 3rds. ( if your slices are little thicker, you can cut your bacon in half) wrap the bacon around the slices and place on the baking sheet.  

In a small bowl, combine the bourbon, brown sugar, and chili powder. ( if you want it more sweet or more spicy, adjust the spice amounts to your taste. also, if you do not want to use bourbon, use melted butter) Once combined, using a basting brush, brush the mixture onto the bacon. 

Place the potatoes in the oven and bake for 15 minutes, remove from oven and flip potatoes over and repeat the basting process. 

Cook for 15-20 minutes or until done. 


These are great for a dinner party or get together. I also sometimes use prosciutto basted in olive oil and sprinkled with garlic salt and pepper. This is a dish that you really cannot go wrong with and can make completely to your taste. 

Now, try not to spend so much time salivating on all of these other posts that you get nothing done today. I can see that happening to me!







Popcorn with Spicy Bourbon & Maple Bacon

So there is good and then there is gooood. This easily falls into the latter category. When I was flying home(from who knows where) last year there was a recipe for a bacon and popcorn. It looks delish, but then the recipe seemed like way too many steps. Plus...it lacked the only thing that makes bacon even better: Bourbon. So the challenge to recreate it was born. and obviously, if you don't want bourbon, you could abstain from using it, just use a little more syrup/mustard.

6 cups cooked popcorn
6-8 slices bacon(thick sliced)
1 1/2 tbsp maple syrup
1 tbsp spicy brown mustard
1 1/2 tbsp bourbon(I used Makers Mark)
1 tbsp brown sugar
1/2 tbsp chili powder


Combine the syrup, mustard and bourbon, brush on one side of the bacon. Mix together the brown sugar and chili powder and sprinkle over the bacon. Bake for about 20 min at 325. Take out, turn over and repeat process. Once bacon has cooled, using kitchen shears, cut into small pieces. 

In a large bowl(that has a lid) combine the popcorn and bacon and after the lid is on, shake for about a minute to fully combine. 

This is perfect for a party or small get together or even as a late night snack. I have no idea how long this would last. I would imagine with the lid on, probably two days...but you do what you think is best. Besides, it made it about thirty minutes when I served it;)

Strawberry Bourbonade Popsicles

yes, you read that right. Some of my favorite things in one idea. If you have been following this little piece of my world for any sum of time...then you should know about my obsession with my pride and joy...my clearance popsicle maker. Hey, I don't have kids or puppies. Don't you judge me for having lower standards.

This is really simple. And yes, for any of you who are saying "alcohol won't freeze" You would be all kindsa incorrect And since this is bourbon, it is strong in taste, and you know, just strong period. So you do not need much anyways.


Ingredients
1 cup strawberries, chopped small
2 tbsp bourbon
1 1/2 cups lemonade

Makes 2 large or 3 medium popsicles.

place chopped strawberries in a container with lid and add the bourbon, I like to let it soak up overnight, but at least for a few hours. Then the next morning, add to the lemonade. Pour into popsicle mold and freeze for at least 24 hrs, but two days are better.

Enjoy.

and it is just as good to drink if you decide to not freeze it. We made it for a shower and it was delish.

and last week my girl Steph nominated me for an Ivrester award. Which basically is the alcoholics version of a liebster.

  1. What is your favorite drinking game and why? Right, drinking games, the last one I played was when I was watching the ncaa championship, I drank every missed FT. Right now this is my favorite cause...ummm, I cannot think of another one I played last.
  2. It is your birthday, what is your idea of the perfect evening. My husband takes me to a sports bar(dive) there is all you can eat wings and I have bourbon. or crispin. Wait, it's my bday? I have both.
  3. Money is no object, what is your go to drink of choice at a bar? I like what I like so a flight of bourbon: The five most expensive bourbons. and they all better be neat, don't serve me no bourbon that has been tainted by ice. 
  4. How many times have you played the game "Edward 40 Hands" in my lifetime? Ummmm. How bout I go with probably never.(even heard of it)
  5. Take this alcohol screening quiz here, what score did you receive? 10%
  6. What is your favorite memory with Alcohol? haha ummm, a sunset at the light house in Aruba. Champagne toast. twas beautiful.
  7. What is your favorite song about drinking? Or song to drink to? Whiskey Lullaby,  I chose a depressing country song. Cause why not?
  8. What is your favorite activity to do while drinking (i.e. boating, bowling, golf, trivia, etc.) eating. that's right...eating. 
  9. In your opinion, which is the number one party school in the country and why? I will go with ECU, I have been to almost every campus in this country when I worked for ESPN and I will just say ECU. From a sober standpoint.  Although Miami of ohio on Halloween.
  10. When do you know you have had too much to drink? What are your signals? So I reallllllly hate being drunk, hate it. Happy tipsy, yes please and you can normally tell b/c I start trying to hold my chin with my hand and I usually miss and start smacking myself. ha. ayiyi.
I think that reading my answers has led me to the belief that I am some mature adult or something. yikes;)

No, this is not a post about me and my behavior.

at least not today;)

If you have been around these parts awhile then you should know that I love me some bourbon. I love it in my food, in my cocktails and just by itself. 
Maybe even just the bottle with a straw. 

Unless that makes me seem the opposite of classy. 
In that case I only drink it in a low ball glass, neat. 

There are only two ways I will not drink my bourbon...

Mixed with just soda or poured over ice.*shudder*

Anyways, this past year Wiki and I were on one of our many trips to Williamsburg and there was a cocktail that involved bourbon and blackberries and from there I began feigning for it and set about to make my own unique version and this is what I came up with.

I fumbled around with names when this came to me. Bourbon is mainly known as a southern drink and c'mon...the naughty part should be self explanatory.


Ingredients(for 2 cocktails)
6 oz pineapple juice
3 oz bourbon (I used Makers 46)
2 oz blackberry liqueur/brandy
sprite(or club soda)
blackberries

In a shaker filled with ice, mix all ingredients except the sprite and blackberries) shake vigorously  Fill 2 glasses with ice and a few blackberries. Pour the contents of the shaker and top with sprite. Or if you're feeling exceptionally naughty...sparkling wine.

Perfect for a day at the beach or pool...Hope you enjoy!

Bacon Wrapped Ribs With a Brown Sugar, Chili and Bourbon Glaze

This was one of those ideas that just came about from eyeing two separate items almost simultaneously in my fridge. I am probably not the first person to wrap bacon around ribs, but...let's just for the sake of fun, pretend I am. I feel better about myself already.

Mainly, the best thing about this recipe is that it, once again, combines two of my absolute favorite edible items: bacon and bourbon. And it was just as good as I thought it would be.

This is one of those recipes that you really can't go wrong with, you can switch in and out any spices or sauce, making it sweeter or spicier. Whatever pleases your palette most.

Ingredients
1 lb boneless pork ribs
bacon(you will need one slice per rib)
2 cups bbq sauce(homemade or store bought)
1/4 cup bourbon
2 tbsp brown sugar
3 tbsp chili pwdr
1/4 cup apricot jam(optional)

Mix together the brown sugar and chili powder to create a rub. Wrap each rib in a slice of bacon. Brush the ribs with the bourbon and sprinkle one side with the rub. Place in a very hot saute pan(I had used olive oil to prevent sticking), seasoned side down. Brush unseasoned side with bourbon and sprinkle with the rub. Cook for 2 to 3 minutes on each side to get slightly crispy. Place in crockpot and top with bbq sauce and apricot jam. You can also add any left over bourbon or spices.

or if you want...just add more bourbon. Period.

Keep on low for for 7 to 8 hours, or high for 4 to 5.  If you want the ribs to maintain their "rib shape" integrity, you may want to cut cooking time by about 30 min. Otherwise  it is fall apart and still beyond delicious. If you do not have a crockpot, you should be able to bake these at 375 for 2 hrs or so, keeping watch to make sure you have enough liquid. 

If you have some left over, they are perfect for shredded pork tacos.

Prosciutto, Pancetta and Goat Cheese Flatbread.

So there are those moments when you make something and you love it so much...that you falter on whether or not you want to actually share it with others. 
Oh... maybe that's just me. oops.


This flatbread pizza was one of those instances. I only got one slice the last time and I am still sad about it. I should probably get over it, but for the next few weeks I am gluten free and all I can think about is wanting more of this.

I came up with this recipe from a few other creations combined. I had done a baked brie w/the pancetta and prosciutto and a stuffed crescent rolls with the brie and the same mixture. and this was a stumble upon of those dishes.

I am not the biggest fan of brie...but I could seriously eat goat cheese by the pound. Oh. muy. goodness. and so when I was coming up with and finalizing this recipe, I decided to forgo the brie for goat cheese. and maybe best decision ever. no big deal.

I came up with this idea for a cooking contest...and it wasn't till after I submitted it that I realized the two of the winners from the previous three years had a pizza with prosciutto...and I think that probably hurt me.

Anyways. if you like bacon or ham and you like Italian. and bourbon...then this is for you;) if not...I am sorry. and I am confused;)

Ingredients
1 pizza dough
1/4 lb thinly cut prosciutto(sliced into small pieces)
1/4 lb thinly pancetta(sliced into small pieces)
1 small log of goat cheese
2 tbsp bourbon(I used Makers Mark)
1 tbsp apricot jam
1 tbsp EVOO

Directions Preheat oven to 375'
roll out pizza dough on pizza stone/cookie sheet. if you like a crispier crust, before adding any ingredients, prebake for about 8 minutes.

In a saute pan, heat the pancetta, prosciutto and apricot jam together. Using a spoon to stir and coat all the pieces. Add in the bourbon and cook till slightly crispy.
Yeah...that's right, I worked bourbon onto my pizza. That's called winning.

Take the pre baked crust out and brush the dough with olive oil. Using your hands, scatter the pancetta and prosciutto mix over the crust and add the crumbled goat cheese. If you have any liquid left over in the saute pan, drizzle over the pizza.

Place bake in oven and bake for another 12-15 minutes. 

Then before you serve it...eat a big ole slice and don't tell anyone. I won't tell.

and if you want to email or text or do anything of the like...You should check auto correct before you inadvertently call your pizza a street girl.

It does...kinda have a ring to it. Right?

Louisville Limeade and a Weekend Recap

This weekend flew by. 
as they all do.
but this one was stock full of fun.

First up, I got my toes done to mimic a pin I had seen on pinterest


On Friday, I was at  The Devil's Den Walmart when I spied these babies.

 I had to run past them not to pop one open and try it right in the aisle. I think they frown upon that type of behavior. and it was midafternoon, so I refrained;)

Then, as I was pumping gas, I looked up to see ESPN playing on the tv on top of the gas pump. Craziness.
Wiki and I went to dinner at one of the many local bbq joints. I got a pineappletini to go with my hushpuppies. Some people like vinegar, some people like butter. I like drinks. and butter. I can't lie. I gorge those puppies in butter.


Then we went to see Admission. I actually really liked it. Was the perfect blend of humor and real life. I do love me some Tina Fey. 

Saturday, I ran some errands and cleaned the house before having Ashley over to try some new cocktails I was working on. We enjoyed some tasty treats served up with good girl talk. That is my favorite side dish.and macaroni, lest I pretend otherwise.

I came up with a few different drinks, some need a little more twerking. Which will be hard. As it always is when you have to spend an afternoon perfecting adult beverages. arduous work.

Then Wiki came home from a long day of work and surprised me with cupcakes from the cupcake bar. It is this shop in Durham that makes cupcakes based on tasty beverages
and it was finished off watching basketball. Both were absolutely great games!

Yesterday was much needed couple time. Our schedules have been hectic and we haven't really had a lot of time together to just talk and have low key conversation. 

We started the day off with brunch at this amazing New Orleans style restaurant, Battistella's. Oh my gosh, my belly was over the moon happy with me. It's located in the City Market area of downtown. The decor is very understated and I love the exposed brick.
I ordered a Hemmingway daiquiri  this is one of the drinks I learned to make in my classes at ICE in NYC. It was just as good as I remember!


I also love that the chef brought the food to our table and then checked back to see if we liked it. My kinda place.

Wiki got the shrimp and grits.
The fried green tomatoes were topped w/ a bacon and tomato jam.
 Unreal. I am in love.

Then we needed dessert. Obviously. and decided that we should travel from New Orleans to Brussels. 
We stopped by Benelux.Good decisions. Best waffle of my life.

Then we went to look for microwaves because ours decided she was retiring. and she didn't even give a notice. The nerve.

and our day ended with new lamps for our bedroom! Will show you those soon.

and that night, Wiki whipped me up one of his famous steaks while I watched the ACM's

and here is the recipe for the drink.

I was coming up with names for this and Louisville Limeade just fit. Louisville is one of my favorite towns(if you have never visited, it's a must!) and they're obviously known for their bourbon...which is a main ingredient of this cocktail.

It was only after I purchased all my ingredients and was putting it together that I realized it was Saturday and Louisville was getting ready to play in the Semi Finals.

Let me preface this by stating that this drink is not in their honor! Sorry bout it. Go Big Blue!

But their girls are playing in the Women's National Championship tomorrow and I am rooting for them to beat UCONN, so we will go with it is for them. Or Kevin Ware. I am definitely pulling for his recovery.


Louisville Limeade
2 parts Limeade(I used simply limeade)
1 1/2 parts cherry bourbon
1 part citrus vodka
1 lime for garnish
cherry for garnish.
Ice
Directions
Place all ingredients in shaker with ice and shake for at about 25-30 seconds, Place more ice in glass and strain into glass. Or for frozen, place all ingredients in blender and blend till desired consistency 

I placed my cherry on top and then added a little cherry juice I had that had been soaked in bourbon for a few weeks. add a lime wedge.

I googled it and apparently there is already a Louisville Limeade recipe out there...but it has no cherries, so I guess mine is the Louisville{cherry}Limeade.
