Peppermint Oreo Mudslide

I absolutely love hosting get togethers. I am not always the biggest fan of all the prepwork that proceeds said gatherings, but the actual event: sign me up. I never tire of coming up with different recipes to serve and more often than not, I usually like to create different cocktails or put a spin on an old favorite.
I love peppermint all year round so this is not just a holiday drink in my book, but the ingredients are more readily found this time of year. and if we're being honest with each other here...how can you possibly go wrong with oreos? Exactly my answer...you can't!

I first tried my hand at this a few years ago and I tweaked a few things this time to make it as close to perfect as I could. Or ok, next week I will be humble...not today. It is perfect. Would I lie to you? Don't answer that.


Ingredients
1 cup peppermint ice cream
1/2 cup crushed oreos
2 oz kahlua
2 oz baileys
1 1/2 oz vodka(I used whipped cream flavored)
1/2 cup ice
crushed peppermint pieces (optional)

Place all ingredients in blender and blend till desired consistency reached. if you want to rim your glass, I usually pour a little milk on a plate and dip lip of glass in it. on a separate plate, pour crushed peppermint pieces. Dip glass pieces.

I may have already enjoyed a few too many of these this year. I do not feel even a little bit bad about it either! 

Oreo Mudslide Icebox Cake

Oh, this was so yummy. and so easy. And you could make this in a variety of flavors by switching up the ice cream or oreo flavor.  Adult version or kiddie version. And I made this Gluten Free the first time using the Glutino knock off oreos.

All I know is this is good. Would I lie to you? No. Well, not today anyways.

First up is the Mudslide version.

Ingredients
2 packs oreo pudding mix
1 mini bottle kahlua
1 Mini bottle baileys
1 cup milk****
1 tub cool whip
1 package oreos
1 half gallon ice cream softened, (I used Edy's coffee)


In a pan layer the oreos on the bottom. In a separate bowl make the pudding using the kahlua, baileys and milk. Once it starts to thicken, add the cool whip. Let set for a few minutes. Using a spatula, spread the softened ice cream over the oreos. and then spread the pudding mixture over top of that. If you have any oreos left, crush them and crumble over the top.

Freeze for at least two hours.

For Gluten free, use the glutino cookies, vanilla pudding and I know for certain that talenti has numerous gluten free options, if you click on any of these images, it will say right on there if it is GF or not. and I have had no problems with pudding products, except obviously the oreo. But I do not believe it is certified GF, but as far as I can tell by the ingredients, it's fine. But you have to decide for yourself.

****and just use milk or coffee creamer if you want to make this kid friendly. The Belgium chocolate or the toffee almond would be great with this. I actually used chocolate milk for this. I cannot remember the last time I just used plain milk to make pudding. How boring;)

:Gingerbread Eggnog Whoopie Pie & Peppermint Eggnog Mudslide

Doesn't this just scream Christmas time? I should think so! I will admit that I am not the first person in line when someone brings out gingerbread cookies, I love the little houses , yet I have no interest in snapping a bite off one. I have never been a fan of crisp cookies, I know some people love it, I've just never been that girl. These however....so soft and chewy and the eggnog balances off the spice so well. I used pre made "spiked" eggnog, but you can always use non alcoholic...should be easy to locate in the dairy aisle.


Ingredients
cookies
1 bag of gingerbread cookie mix(I found mine at target)
ingredients listed on bag
filling
1/3 cup eggnog
1 packet cheesecake pudding
4 oz cream cheese, softened

Bake according to directions, let cookies cool. In a mixing bowl, mix together pudding pack & eggnog, mix till fully combined. Add in cream cheese and beat till fully incorporated. Slowly add in whipping cream, turn speed on high until stiff peaks begin to form. Place filling in fridge for at least an hour.

Place a dollop of frosting in center of cookie, top w/another and press down till filling spreads to edges.

and then you could always pair this w/ a peppermint eggnog mudslide.


Ingredients
1 large scoop peppermint ice cream
1 oz eggnog
1 oz baileys
1 oz vodka(I used vanilla)
1 cup ice

place all ingredients in blender and blend till desired consistency.

 pour in a peppermint sugar rimmed glass, top w/some whipped cream and get yourself out a straw and sit back and say "aaahhh" then enjoy it w/the cookie while you perhaps watch your favorite holiday movie;)

Whoopie Pie Wednesday: Maple Spice and a mudslide

yes, cause I care aboout y'all so much...I am combining two yummies in one post! The first is the usual Wednesday go to. Whoopie Pies and this week involves two of my favorite flavors. Maple and spice. yay Fall. It is still officially Fall. Till December 21st actually. So I have zero guilt about this. ZERO.





Ingredients
1 box spice cake mix
1/3 cup veggie oil
2 eggs
1/4 cup water
1 packet cheesecake pudding
3 tbsp pure maple syrup
1 cup whipping cream
4-6 oz cream cheese softened
(see notes below if you want cool whip version instead)

Preheat oven to 350 degrees

Combine cake mix, oil, eggs & water in bowl.   
Drop by  tablespoon onto lined cookie sheet (leave about an inch between each cookie)

Bake 8-9 minutes

Cool on pan 5 minutes, move to wire rack and cool 15 more minutes

Beat softened cream cheese on low for a min or until fluffy, add dry pudding packet, maple syrup & two tbsp of whipping cream, beat on low till pudding is fully incorporated into cream cheese and add remaining whipping cream, turn speed to high and beat until stiff peaks form. Let set in fridge for at least an hour before frosting. 

notes***
for cool whip version, make cheesecake pudding w/1 cup of milk, let set up in fridge for 10 minutes, then fold in whipped topping and maple syrup. The cinnamon cool whip would be good too.
You could also use store bought frosting and just mix in the maple syrup.

Place a dollop of frosting in center and top w/another cookie. 

Now go enjoy these. Wait, you probably need a frothy drink to go with these bad boys. In case you missed this post; pumpkin latte mudslide, Here is the recipe for the other one I was supposed to share...

Pumpkin Fluff Mudslide.

Ingredients
1 cup coffee ice cream
1 1/2 oz kahlua
1 1/2 oz marshmallow fluff vodka
1 1/2 Pumpkin Cream liqueur)or pumpkin eggnog)
1 cup ice
1 pinch pumpkin pie spice(optional)

Place all ingredients in blender and blend to desired consistency  Keep in mind you can make this w/more or less of any ingredient, including alcohol. This would be super simple to adapt to a Non Alcoholic version, just omit the alcohol and use 3 oz coffee and substitute pumpkin spice coffee creamer.

Thirsty Thursday: Pumpkin Latte Mudslide

It's that season again. You know, Starbucks Holiday drinks. Pumpkin Spice Latte, Salted Caramel then comes Peppermint Mocha What? You didn't know there were 5 seasons now?! I can assure you that for some people this is basic truth. I have made quite a few Starbucks inspired mudslides, salted caramel mudslide and peppermint oreo mudslide. and so I had thought for a while as to how I could bring a pumpkin spice latte to fruition.

The first go round was for our Halloween party, I made my concoction using coffee ice cream, pumpkin cream liquor, kahlua & fluff vodka...and it was pretty tasty...Just didn't quite capture the true essence that is a Pumpkin Spice Latte, the version that people literally plan their day around(not me, but definitely some people) and I set about to rectify this.

And just this past week Starbucks themselves sent me a sign that they were all gung ho in supporting me in my endeavor by releasing this is very thing one day I was aisle hopping trying to come up w/ideas. I dare you to argue this wasn't their goal...

Behold this diddly...

and my answer was so obvious and simple it would have been almost offensive to not oblige Starbucks in their quest to help me perfect this tasty treat.

Ingredients
1 cup ice cream
1 1/2 oz kahlua
1 1/2 oz vanilla vodka
1 1/2 oz baileys
2 oz coffee
1 cup ice
1 pinch pumpkin pie spice(optional)

Place all ingredients in blender and blend to desired consistency  Keep in mind you can make this w/more or less of any ingredient, including alcohol. This would be super simple to adapt to a Non Alcoholic version.
Just omit the alcohol and use 3 oz coffee and substitute one of the bazillion many caramel flavored coffee creamers.

I made this particular recipe for a gathering I had and used shooter glasses. This recipe yielded 10 medium sized shooters. I would think it would convert to 2/3 glasses if that's how you choose to enjoy it.

and don't worry, I know you are so concerned about not knowing exactly what my first recipe was, the one involving pumpkin liqueur and marshmallow fluff. Stop it, you should know by now I only want for you to get some goodness. Tune in soon and you will get that one too.

and yes. earlier your mind didn't deceive you...I typed the word diddly. that's right. and I am not afraid to own it.

Bourbon Heath Mudslide

literally three of my favorite words, each in their own right...looking at the three side by side is almost too much to take. This drink was ridiculous. I wish I could somehow properly parlay my thoughts on this to words, yet somehow they evade me...Just do what you can to make this asap, especially if your name is Ashley and you love bourbon as much as I do, I posted this recipe especially for you, madame!

I was in Harris Teeter the other day and stumbled upon this:



You have got to be kidding me?!?! I literally did a neck snap in the middle of the aisle, it was as if the people who work at High Road sincerely cared about my well being and want only for me to be happy. How sweet of them and how delightful of HT to have them on sale, buy one, get one, Yay day for me!

I raced home and dove into this as quickly as I could and it was divine, divine I tell you! But...b/c I am me, I had to see what other step I could take this to. I looked and discovered I had some heath bar pieces and some caramel ice cream syrup and of course...bourbon and whipped cream vodka and thus was born, my hands down favorite(at least to date) mudslide.

Ingredients
1 cup ice cream
1 1/2 oz bourbon
1 oz whipped cream vodka
1 oz bailey's
smattering of heath bar pieces
1/2 cup ice
2 oz caramel ice cream topping
place all ingredients in blender and blend to desired consistency

Obviously you may not find this ice cream readily, I would think you could use any caramel based ice cream and get a similar delicious treat. Have at it! 

and the second time I made this...I topped it w/bourbon whipped cream. I combined 1 tbsp of cheesecake pudding(dry mix) and a tbsp of bourbon, mixed them together and let sit in fridge for a few minutes. I whipped half a cup of heavy whipping cream till it started to thicken and added the pudding mixture, beat till very thick. Oh. my. goodness. It was like a bourbon cheesecake mousse. I used it as the filling in my red velvet whoopie pies last time. Yum. 


Butterbeer Mudslide


My "knock off" version

As I've previously alluded to outright stated, I love reading. I do it whenever I have a free moment and I will read a myriad of topics and authors. And I love me some Harry Potter. Thus... this blog entry.

A few years ago my friend Theresa and her friend Margareth and I were able to take a trip to Universal Studios to meander our way through this place.

It is literally as if you are there.

We had so. much. fun, I cannot fully express just how much. It was my 31st birthday and I remember seeing all these little kids milling about and thinking "Please leave, y'all weren't even born when these books were first written.". Haha please feel free not to mention that these were intended for tweens. Wrong answer! ;) I am pretty sure I called Wiki 4300 times that day or somewhere close. He finally became exasperated and asked me to let him work. Humph. The nerve. haha Needless to say...I enjoyed myself mightily.

Anyways, T recently celebrated the entrance to her greatest decade yet, her 30's. Yup. So I decided I needed to throw a Harry Potter themed party, why the heck not I ask you, why the heck not?! 

First up was Butterbeer and I decided to conquer it in two separate ways, my usual go to mudslide and a trifle. Today is the mudslide version. It is not what you get at Universal, nor will I delude myself pretend it to be. But mine had whipped cream vodka. Soooooo.



Ingredients
2 cups caramel macchiato ice cream(or any caramel/butterscotch ice cream)
1 cup vanilla ice cream
1/2 pack butterscotch pudding(dry) or 3 tbsp butterscotch ice cream topping
1/2 cup vanilla cream soda(poured out foam)
1 1/2 oz Kahlua
1 1/2 oz bailey's 
1 oz whipped/vanilla vodka
1 cup ice

put all ingredients into blender and blend to desired consistency, makes 2(ish)  mudslides

optional whip cream recipe,
I had some left over that I had in fridge and the next day added more ice and re-blended. I decided it needed whip cream and here's what I did.

1/2 cup cold heavy whipping cream
1 tbsp butterscotch pudding(left over from previous nite)
1 tbsp vanilla cream soda

whip on low for one minute and then on high speed until stiff peaks begin to form.
This is another recipe you can play around with to make it closer to what you prefer.

Bottoms up! 

Salted Caramel Mudslide

The craze known as Salted Caramel is everywhere. When I first heard of this marriage a few years ago I was, admittedly, hesitant to try it. Then my friend Alexis made a cupcake and I didn't want to be rude...plus it was divine looking, so why not? I still remember my first bite. it was that good and  I have eaten lots of cupcakes...Well, I suppose if you count a couple thousand as lots. I joke. Not really, haha. Every city I visit I like to check out the "cupcakeries" It's kinda my little adventure for myself. I have been to numerous and this cupcake was on level with some of the best and I was sold on this combo... swiftly. And now two years later...it's all the rage.


This came about like most of my concoctions: meandering my way though the ice cream aisle. haha true story, I'm telling you people, look at the possibilities when you go next time. Just about any ice cream will make a tasty drink of some sort. Mudslide just happens to be my go to. I had just been in the tea and coffee aisle, grabbing my daily crack- Zen green tea- when I saw it: Starbucks Salted Caramel Hot Chocolate...yes, please! Then when I was in the ice cream aisle I noticed the Starbucks Caramel Frappachino ice cream, the wheels started working and just like that dessert in a glass was born. Glorious...simply glorious. 


You could make so many variations of this one drink, play with the kahlua and baileys. try the new caramel flavored vodka. perhaps switch the ice cream up and get Karamel Sutra or Creme Brûlée by Ben and Jerry's. You can make it non alcoholic if you wanted. Just do something.  All I know is I pretty much achieved nirvana when this first hit my tongue. The only thing that makes me sad is I made this the nite of the Superbowl and as a Pats fan...I haven't had one since...too soon. haha 


Ingredients
for drink
2 cups caramel flavored ice cream
1/4 cup of salted caramel hot choc mix
1/4 cup whipped cream vodka
2 tbsp Kahlua
2 tbsp bailey's
2tbsp caramel coffee creamer
2 tbsp caramel syrup
1 cup ice
for caramel whip cream
1 cup cold whipping cream
3 tbsp caramel syrup
1 tbsp cocoa mix
heath-bar pieces* optional


directions
place all ingredients in blender and blend to your desired consistency, if you have some chocolate or caramel syrup pour some in the glass and twist for decorative purposes only. 
To make whip cream, pour whipping cream & cocoa mix in bowl and whip on low speed for 1 minute and gradually increase speed and as stiff peaks begin to form(after 2-3 minutes) slowly beat in the caramel until it is fully incorporated.  Pipe whip cream over the mudslide and top with heath-bar bits(if desired)


And I wish I had done a caramel rim w/sea salt. Apparently my genius was on break. Fail on my part. Now my drink looks second tier. but it tastes first, lest you doubt.




On a side note...I have been using lots of Starbucks lately. The funny thing here is the only purchase I ever make from an actual Starbucks is Zen green tea. I hate coffee. Actually I think abhor may be more apt, but I adore coffee ice cream.  Weird I know...I never claimed to make sense.

Red Velvet Mudslide

If you know me you know that bourbon makes me deliriously happy. I will find an excuse to put it in anything. However, I also have a totally affinity for mudslides and as of late I have been on a major kick, making any flavor combination possible. Now that Bailey's and Kahlua come in so many flavors, it's even easier. I must admit though...whipped cream vodka is key.


From my earlier post ooey gooey red velvet butter cookies, I had some Ben & Jerry's red velvet ice cream left over. I was contemplating what to do with it when the idea hit me: mudslide. I had all the ingredients, but was unsure of how it would taste. C'mon, how could it be bad? I was right, it was far from bad...it was downright good!


Ingredients
2 cups red velvet ice cream
1/4 cup whipped vodka
2 tbsp Kahlua
2 tbsp baileys
1/2 cup ice


Put all ingredients in blender and blend till desired consistency. You can add or subtract booze to make it as strong(or not) as you like.


You can also make this as a milkshake...I would recommend using sweet cream coffee creamer instead of milk, this would give it a creamier taste.


Enjoy...if you don't-what's wrong with you?!

Peppermint Oreo Mudslide

Yes, you read that right. Peppermint. Oreo. Mudslide. or Goodness defined. Either works.
I would like to say a lot of witty things here. But I'm not b/c this speaks for its self. Moving right along.


Ingredients
1/2 cup mini oreos
2 cups peppermint mocha ice cream
peppermint sugar crystals(ummm, we'll say a tbsp)
2 tbsp bailey's
2 tbsp kahlua
2 tbsp vanilla vodka
1/2 cup ice
(if you can find peppermint kahlua or edy's peppermint ice cream, they were out, booooooo)


I place ice in first then add 1/2 the liquid, add the ice cream, oreos, sugar crystals and add remaining liquid.
Crush ice for a moment and then turn to frappe(or whatever your blender would use for milkshakes)
I had to stop the blender and use a spoon to mix it a little before starting the blender again to get it to my desired consistency


You can do many things to make this to your liking. More or less alcohol to get it to your preferred "boozy" state. If it's too "liquidy" add more ice cream or oreos and if it's too thick you could add more booze or milk.

This was my base point. I.LOVE.THESE SHAKES. Like no words are descriptive enough! I prefer it with the peppermint from EDY's, but this was beyond yummy also. I made peppermint mudslides last year  and didn't add the oreo. I think that the peppermint mocha ice cream probably works best w/this particular version.
