Oreo Mudslide Icebox Cake

Oh, this was so yummy. and so easy. And you could make this in a variety of flavors by switching up the ice cream or oreo flavor.  Adult version or kiddie version. And I made this Gluten Free the first time using the Glutino knock off oreos.

All I know is this is good. Would I lie to you? No. Well, not today anyways.

First up is the Mudslide version.

Ingredients
2 packs oreo pudding mix
1 mini bottle kahlua
1 Mini bottle baileys
1 cup milk****
1 tub cool whip
1 package oreos
1 half gallon ice cream softened, (I used Edy's coffee)


In a pan layer the oreos on the bottom. In a separate bowl make the pudding using the kahlua, baileys and milk. Once it starts to thicken, add the cool whip. Let set for a few minutes. Using a spatula, spread the softened ice cream over the oreos. and then spread the pudding mixture over top of that. If you have any oreos left, crush them and crumble over the top.

Freeze for at least two hours.

For Gluten free, use the glutino cookies, vanilla pudding and I know for certain that talenti has numerous gluten free options, if you click on any of these images, it will say right on there if it is GF or not. and I have had no problems with pudding products, except obviously the oreo. But I do not believe it is certified GF, but as far as I can tell by the ingredients, it's fine. But you have to decide for yourself.

****and just use milk or coffee creamer if you want to make this kid friendly. The Belgium chocolate or the toffee almond would be great with this. I actually used chocolate milk for this. I cannot remember the last time I just used plain milk to make pudding. How boring;)

Pizzelle Ice Cream Sandwiches

Can you say "yum?" Admittedly, I was unfamiliar w/this treat until my last name became one that ends w/a vowel. haha The first time I tried one...ended badly. I have extremely sensitive taste buds and if there is the SLIGHTEST hint of something I do not care for, then I can't do it. and most of these are laced w/anise, basically black liquorice. ummmm, ECH. I was completely against ever trying one again when I was informed they aren't always that flavor, life is good again;).


As we know I love to try and experiment w/things I have laying around. We were in NH on vacation and the mamma in law had brought some w/her and I looked at them and ding ding ding, thought  'wouldn't these be fabulous w/ice cream in the middle?!' and yes, frankly speaking, they were. haha and obviously from the amount of recipes I saw for this very thing, others were quicker to the draw on this idea than me. 


You can purchase pre made pizzelles or if you come from a family like Wiki's, they'll be made for every get together! Score and if not, here's an easy recipe:pizzelle recipe.


Once you have the cookies, get your favorite flavor of ice cream and get ready for some goodness!


2 cups ice cream of your choice
8 cookies
aluminum foil


place one cookie on sheet of foil, top w/half cup softened ice cream and top w/cookie. Wrap tightly in foil and place in freezer for 2 hours. You can take these out sooner than the 2 hour mark, but this way the cookie has slightly softened and melts in your mouth. Such a simple treat!

Sparkling Raspberry 'Sicle

Yes, another adult beverage. True story, I have a slight affinity for yummy, fruity drinks, the kind that looks as good as it tastes...or at least has a delish sounding name.  I can't have bourbon ALL the time(sad faced) I have to be girly every once in a while.

Anyhoo, a while back my friend, Michelle, was having a baby shower and I was asked to come up w/a tasty concoction, only one demand: all PINK. Yep, twin baby girls. I needed to make something that could also easily be adapted into virgin style. I wanted to make it "punchish"(is this a word, no? remind me to care) What makes a typical baby shower punch...well typical? Sherbet. C'mon now, everyone has had it. Or at least everyone in the South has and isn't that what counts;) 

Raspberry lemonade, vanilla ice cream, sparkling raspberry wine and/or sprite. These are what made the cut. The plan was to put half the cartons of sherbet/ice cream in two punch bowls and in one top w/half the sprite and the other the sparkling wine. and I say the plan because...

Lily and Grace had other plans, ones that included being born. over two.months.early. The shower was scheduled for St. Patty's Day. and Lily and Grace decided being identiacal twins wasn't enough...they needed to be Irish twins too. haha 

Due to my overabundance of drink ingredients and meager amounts of  fridge space, I drew upon the conclusion that I should probably make myself three one. They turned out rather good, as in, yes, please, I will have another...just to make sure it wasn't, you know, a fluke. Gotta cover all those bases around here.

Anyways, here is what I came up with...

ingredients:
1 large scoop raspberry sherbet
1 large scoop vanilla ice cream
3 oz raspberry lemonade 
2 oz sparkling wine
1 oz sprite

directions
place sherbet/ice cream in glass, top w/lemonade, then with the sprite. Once the sprite settles top with the wine. Let it sit a few minutes and it will all intermingle w/one another and this my friends is when the goodness happens!

adaptions
you can use all sprite or all sparkling wine if you choose to do so. I also may or may not have...added a smidgen of whip cream vodka the second go round. And if I did do this...it was more than worth it, but don't ask me what a smidgen means.
if you want to make a large version, I would start out by putting half of the sherbet/ice cream in a punch bowl/pitcher and then top as w/half the bottles, to start with.

The summer is upon us, hopefully you guys can get a taste of one of these sooner rather than later.
