Pistachio Goodness Bars

I originally made these for Christmas as a twist to my mom's birthday cake for Jesus...her version of the watergate cake. I first tried my hand and made whoopie pies and just decided to whip these up too.

and I am so glad I did. These tasty treats were a total delight and since they're green...they would also make a perfect St. Patty's day treat for those of you who aren't jumping on the mint bandwagon.


 Ingredients:
Cake:
1 box yellow cake mix
8 tbsp butter, melted
1 egg

1 packet butterscotch pudding

Filling:
1 8 oz pkge of cream cheese, softened
2 eggs
8 tbsp butter, melted
16 oz powdered sugar
1 packet pistachio pudding




DIRECTIONS

Preheat oven to 350 degrees F.
Combine the cake mix, egg, butter, pudding packet  and mix well with an electric mixer.  Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.
In a large bowl, beat the cream cheese until smooth.  Add the eggs and butter and beat together. 
Next, add the pudding packet and slowly add in the powdered sugar and mix well.  Spread over cake batter and bake for 40 to 50 minutes.  Make sure not to over bake as the center should be a little gooey.

  1. Oh my, I can't wait to try this! Not that I'm super into St. Patrick's Day, but I do love green and I DON'T like mint, but I DO adore pistachio!

  2. Um..Yum! Pistachio ice cream is one of my favs...so how can you go wrong with this?! Totally adding this to my St. Patty's Day bandwagon...don't worry, I will tag you in the pic on IG ;) haha
